Rinse the brown lentils thoroughly under cold water until the water runs clear. Set them aside.
In a medium pot, combine the lentils and 4 cups of water. Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 15-20 minutes or until the lentils are tender but still holding their shape.
While the lentils cook, rinse the rice under cold water until the water runs clear to remove excess starch. Set the rice aside.
Once the lentils are ready, add the rinsed rice to the pot along with 1 teaspoon of salt and 1 teaspoon of ground cumin. Stir gently to combine.
Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for 15-18 minutes, or until the rice is cooked and has absorbed the water.
While the lentils and rice are cooking, prepare the caramelized onions. Peel and slice the onions into thin half-moons.
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt, and cook, stirring often, for 15-20 minutes or until the onions are deeply caramelized and golden brown. Lower the heat if needed to prevent burning.
Once the rice and lentils are cooked, gently fluff the mixture with a fork to loosen the grains. Add black pepper to taste.
Transfer the rice and lentils to a serving dish, then top it generously with the caramelized onions. Garnish with fresh parsley if desired.
Serve warm or at room temperature. Enjoy this hearty and flavorful Lebanese dish as a standalone meal or alongside a fresh salad and a dollop of yogurt.
