Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 large bell pepper, diced
  • 4 pieces garlic cloves, minced
  • 1 pound ground beef
  • 0.5 pound ground pork
  • 28 ounces diced tomatoes with juice
  • 2 tablespoons tomato paste
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and bell pepper and sauté for 5 minutes, or until softened.

Step 3

Stir in the minced garlic and cook for 1 more minute, being careful not to let it burn.

Step 4

Add the ground beef and ground pork to the pot, breaking it up with a wooden spoon. Cook until no pink remains, about 7-10 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for 2 minutes to toast the spices.

Step 6

Add the diced tomatoes (with juice), tomato paste, kidney beans, black beans, and beef broth. Stir well to combine.

Step 7

Add a splash of Worcestershire sauce and a dash of apple cider vinegar to brighten the flavors.

Step 8

Bring the chili to a gentle boil, then reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.

Step 9

Taste and adjust seasonings as needed, adding more salt or spices depending on your preference.

Step 10

Serve hot, garnished with fresh cilantro if desired. Enjoy with cornbread or over rice for a complete meal.
