Ingredients

  • 1 cup beef or chicken broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and swirl to coat the bottom of the pot.

Step 2

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat and set the cooked beef aside on a plate.

Step 3

In the same pot, add the diced onion, minced garlic, and diced green bell pepper. Cook until softened, about 5 minutes, stirring occasionally.
