Ingredients

  • 6 medium Yukon Gold potatoes
  • 2 large Yellow onion
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper

Directions

Step 1

Peel the Yukon Gold potatoes and slice them into 1/4-inch thick rounds.

Step 2

Peel and thinly slice the yellow onions.

Step 3

Mince the garlic and finely chop the parsley. Set aside.

Step 4

Bring a large pot of salted water to a boil and blanch the potato slices for 3-4 minutes until tender but not fully cooked. Drain and pat dry with a clean kitchen towel.

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.

Add the sliced onions to the skillet and cook, stirring often, for 10-12 minutes until they are soft and lightly caramelized. Remove the onions from the skillet and set aside.
