  • 1.5 lbs boneless, skinless chicken thighs

  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, sliced
  • 14 oz canned diced tomatoes (with juice)
  • 4 cups low-sodium chicken broth
  • 15 oz cannellini beans, rinsed and drained
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 3 cups kale, chopped
  • 1 tbsp lemon juice
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Sear the chicken thighs for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

Stir in the sliced carrots and celery, and cook for 5 minutes to allow the vegetables to slightly soften.
