Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoons salt
  • 2 large eggs
  • 1 cups whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cups boiling water
  • 1 cups unsalted butter (for frosting)
  • 0.75 cups unsweetened cocoa powder (for frosting)
  • 3.5 cups powdered sugar (for frosting)
  • 0.3 cups milk (for frosting)
  • 2 teaspoons vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Mix until well blended.

Step 3

Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture. Mix on medium speed using a hand mixer or stand mixer until the batter is smooth and uniform.

Step 4

Carefully stir in the boiling water. The batter will become thin, but this is normal.

Step 5

Divide the batter evenly between the prepared cake pans.

Step 6

Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then turn them out onto wire racks to cool completely.

Step 8

While the cakes are cooling, prepare the frosting. In a medium mixing bowl, cream the unsalted butter using a mixer on medium speed until light and fluffy.

Step 9

Add the unsweetened cocoa powder and beat until fully combined.

Step 10

Alternately add the powdered sugar and milk to the butter mixture, beating continuously. Add the vanilla extract and mix until the frosting is smooth and spreadable.

Step 11

Once the cakes have cooled completely, place one layer on a serving plate and spread a generous amount of frosting on top.

Step 12

Place the second cake layer on top of the frosted layer and spread frosting over the entire cake, covering the top and sides.

Step 13

Decorate as desired and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.
