  • 4 slices Bacon
  • 2 tablespoons Unsalted butter
  • 2 tablespoons (minced) Shallots
  • 3 tablespoons (finely diced) Red bell pepper
  • 2 cloves (minced) Garlic
  • 0.3333 cup Breadcrumbs
  • 1 tablespoon (chopped) Fresh parsley
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Olive oil
  • 2 tablespoons Grated Parmesan cheese

Directions

Step 1

Preheat your oven to 450°F (232°C) and set the rack in the center position.

Step 2

Thoroughly scrub the clams under cold water to remove any grit or sand. Discard any clams that are open and do not close when tapped.

Step 3

Place the clams on a baking sheet and bake them in the preheated oven for about 5-7 minutes, just until they begin to open. Carefully remove the clams from the oven and let them cool slightly. Pry open the shells, discarding the top shell and leaving the clam in the bottom shell. Place the clams on a clean baking sheet.

Step 4

Cook the bacon slices in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to cool, then crumble into small pieces.

In the same skillet (with 1 teaspoon of bacon grease retained), melt the butter over medium heat. Add the minced shallots, red bell pepper, and garlic. Sauté for about 2-3 minutes until softened and fragrant.
