Ingredients

  • 3 pounds Beef chuck roast
  • 4 cups Beef broth
  • 1 large, diced Yellow onion
  • 4 minced Garlic cloves
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Soy sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Black pepper
  • 1 teaspoon Kosher salt
  • 2 whole Bay leaves
  • 1 teaspoon Sugar
  • 8 pieces Crusty sandwich rolls or slider buns
  • 8 slices Optional: sliced provolone cheese

Directions

Step 1

Season the beef chuck roast with kosher salt and black pepper on all sides.

Step 2

In a large skillet over medium-high heat, sear the roast on all sides until deeply browned, about 4-5 minutes per side. Remove from the skillet and set aside.

Step 3

In the same skillet, add the diced onion and minced garlic. Sauté for about 2 minutes until fragrant and slightly softened.

Step 4

In a slow cooker, combine the beef broth, Worcestershire sauce, soy sauce, Italian seasoning, sugar, and bay leaves. Stir well to combine.

Step 5

Add the sautéed onion and garlic to the slow cooker. Place the seared beef roast into the mixture, ensuring it is mostly submerged in the liquid.

Step 6

Cover the slow cooker with a lid, then cook on low for 6 hours or until the beef is fork-tender and can be easily shredded.

Step 7

Once cooked, remove the roast from the slow cooker and use two forks to shred it into bite-size pieces. Discard any excess fat.

Step 8

Strain the cooking liquid to remove bay leaves and any large onion pieces, then return the shredded beef to the liquid to keep it moist and flavorful.

Step 9

Toast the sandwich rolls or buns if desired. Layer each with warm shredded beef and an optional slice of provolone cheese.

Step 10

Serve the hot beef sandwiches with additional cooking liquid for dipping, or pile the beef over mashed potatoes for a comforting dinner.
