Ingredients

  • 1 pound Ground beef (80% lean)
  • 0.5 pound Ground pork
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Whole milk
  • 0.5 cup Grated Parmesan cheese
  • 1 large Egg
  • 2 tablespoons Fresh parsley, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cups Marinara sauce (optional, for serving)

Directions

Step 1

In a small bowl, combine the panko breadcrumbs and milk. Let sit for 2-3 minutes until the breadcrumbs absorb the milk and form a paste-like texture.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, Parmesan cheese, egg, parsley, garlic, salt, and black pepper.

Step 3

Using clean hands or a fork, mix the ingredients until just combined, being careful not to overwork the mixture. This helps ensure the meatballs stay tender.

Step 4

Scoop out approximately 2 tablespoons of the mixture for each meatball and roll gently into a ball. Repeat until all the mixture is used, yielding about 16 meatballs.

Step 5

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs in batches, ensuring not to overcrowd the pan.

Step 6

Cook the meatballs for 2-3 minutes on each side, turning carefully to brown evenly. Remove the browned meatballs and place them on a plate lined with a paper towel.

Step 7

If serving with marinara sauce, transfer the browned meatballs to a pot of simmering marinara sauce. Let the meatballs cook in the sauce for 15-20 minutes until fully cooked through.

Step 8

Serve the meatballs hot, over pasta, in a sub roll, or as a standalone dish with a side of crusty bread.
