Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 1 tablespoon chives (optional, chopped for garnish)

Directions

Step 1

Place the eggs in a medium saucepan and cover them with cold water, ensuring the water is about 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, remove the saucepan from heat, cover with a lid, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to an ice bath (a bowl of ice water) to cool for 5 minutes. This makes peeling easier.

Step 4

Peel the eggs under running water or in the bowl of water to remove the shells smoothly.

Step 5

Slice each egg in half lengthwise and carefully scoop out the yolks with a spoon. Place the yolks in a small mixing bowl and set the whites aside on a platter.

Step 6

Mash the yolks with a fork until they are fine and crumbly.

Step 7

Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the mashed yolks. Mix until smooth and creamy.

Step 8

Using a spoon or a piping bag with a star tip, fill the hollowed-out egg whites with the yolk mixture, mounding slightly over the top.

Step 9

Sprinkle the filled eggs with paprika and garnish with chopped chives, if desired.

Step 10

Chill in the refrigerator for at least 30 minutes before serving to enhance flavor.
