Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.5 cup milk
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1.5 cups fresh cranberries
  • 2 tablespoons coarse sugar (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the tin with non-stick spray.

Step 2

In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.

Step 3

Melt the butter and let it cool slightly. In a medium bowl, mix the melted butter, milk, eggs, vanilla extract, and orange zest until well combined.

Step 4

Create a well in the center of the dry ingredients and pour the wet mixture into it. Stir gently with a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Fold the fresh cranberries into the batter until evenly distributed.

Step 6

Using a spoon or ice cream scoop, evenly divide the batter among the muffin cups, filling each about 3/4 of the way full.

Step 7

If desired, sprinkle coarse sugar on top of each muffin for added crunch and sweetness.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
