Ingredients

  • 10 pieces Fresh lychees or canned lychees
  • 500 ml Water
  • 10 grams Agar-agar powder
  • 50 grams Sugar
  • 200 ml Lychee juice (if using canned lychees, use syrup)
  • 10 ml Lime juice

Directions

Step 1

If using fresh lychees, peel and deseed them. If using canned lychees, drain and reserve the syrup.

Step 2

In a saucepan, combine the agar-agar powder with the water and allow it to soak for about 5 minutes.

Step 3

Place the saucepan over medium heat and bring it to a boil, stirring continuously until the agar-agar is completely dissolved.

Step 4

Add the sugar to the saucepan and continue to stir until fully dissolved.

Step 5

Pour in the lychee juice or the canned syrup, and mix well.

Step 6

Turn off the heat and add lime juice to the mixture. Stir to incorporate.

Step 7

Arrange the lychees evenly in a jelly mold or small serving cups.

Step 8

Carefully pour the liquid mixture over the lychees in the mold(s).

Step 9

Allow the jelly to cool at room temperature for about 30 minutes.

Step 10

Once cool, refrigerate the jelly for at least 2 hours or until fully set.

Step 11

To serve, gently run a knife around the edges of the mold to loosen the jelly and invert onto a serving plate, or serve directly in cups.
