  • 500 grams beef marrow bones
  • 50 grams unsalted butter

  • 250 milliliters red wine
  • 500 milliliters beef stock
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon parsley, chopped

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

Place the beef marrow bones on a baking sheet and roast in the preheated oven for 25-30 minutes until the marrow is soft and starting to separate from the bone.

While the bones are roasting, melt the butter in a medium-sized saucepan over medium heat.

Add the finely chopped shallots and minced garlic to the melted butter and sauté until the shallots are translucent and soft, about 5 minutes.

Remove the marrow bones from the oven and, using a small spoon, scoop out the marrow from the bones into a bowl.
