Ingredients

  • 4 ripe pears (Bosc or Anjou recommended)
  • 4 cups water
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • 2 tablespoons honey
  • 1 teaspoon cornstarch
  • 1 tablespoon water (for cornstarch slurry)
  • 4 sprigs mint leaves (optional, for garnish)

Directions

Step 1

Peel the pears, leaving the stems intact. Slice a small amount off the bottom of each pear so they can stand upright if desired.

Step 2

In a medium pot, combine 4 cups of water, granulated sugar, lemon juice, and vanilla extract. Heat the mixture over medium heat, stirring until the sugar completely dissolves.

Step 3

Gently lower the peeled pears into the poaching liquid. Cover the pot and simmer on low heat for 20-25 minutes, or until the pears are tender and can be easily pierced with a knife. Turn the pears occasionally during cooking to ensure even poaching.

Step 4

While the pears are poaching, prepare the raspberry sauce. In a small saucepan, combine the fresh raspberries, honey, and 2 tablespoons of water. Cook over medium heat, stirring occasionally, for about 5 minutes or until the raspberries break down into a sauce.

Step 5

For a smoother consistency, strain the raspberry sauce through a fine mesh sieve to remove seeds, if desired. Return the strained sauce to the saucepan.

Step 6

In a small bowl, mix the cornstarch with 1 tablespoon of water to create a slurry. Stir the cornstarch slurry into the raspberry sauce and cook over low heat for 2-3 minutes, or until the sauce thickens slightly. Remove from heat and set aside.

Step 7

Once the pears are tender, carefully remove them from the poaching liquid using a slotted spoon and let them drain on a plate.

Step 8

To serve, spoon the warm raspberry sauce onto individual dessert plates. Place a poached pear in the center of the plate and garnish with fresh mint leaves, if desired.

Step 9

Serve immediately and enjoy your Luscious Pears in Raspberry Sauce!
