Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 2 cups fresh pineapple, cubed
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 can coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 4 cups Cooked jasmine rice (for serving)

Directions

Step 1

Begin by patting the chicken thighs dry with paper towels and season them lightly with salt and pepper on both sides.

Step 2

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Step 3

Add the chicken thighs to the skillet and sear for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside on a plate.

Step 4

In the same skillet, add the diced onion and red bell pepper. Sauté for 3-4 minutes, until softened.

Step 5

Add the minced garlic and grated ginger to the skillet. Cook for 1 minute, stirring constantly to release their aroma.

Step 6

Add the cubed pineapple to the skillet and stir to combine with the vegetables.

Step 7

Pour in the coconut milk, soy sauce, and brown sugar. Stir the mixture until the sugar has dissolved and the sauce is well blended.

Step 8

Return the seared chicken thighs to the skillet, nestling them into the sauce. Reduce the heat to medium-low and let simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Step 9

Taste the sauce and adjust seasonings if necessary. Add a pinch of additional salt or a splash of soy sauce to taste.

Step 10

Serve the Luscious Luau over a bed of cooked jasmine rice, garnished with fresh cilantro if desired.
