Ingredients

  • 150 g granulated sugar
  • 30 g cornstarch
  • 1 pinch salt
  • 500 ml whole milk
  • 4 large egg yolks
  • 30 g unsalted butter
  • 2 teaspoons lemon zest
  • 80 ml lemon juice
  • 1 teaspoon vanilla extract
  • 0 whipped cream (optional, for serving)
  • 0 fresh mint (optional, for garnish)

Directions

Step 1

In a medium saucepan, whisk together the granulated sugar, cornstarch, and a pinch of salt until well combined.

Step 2

Gradually whisk in the milk, ensuring there are no lumps. Place the saucepan over medium heat.

Step 3

Cook the mixture, whisking constantly, until it starts to thicken and bubble gently, about 6-8 minutes.

Step 4

In a small bowl, lightly beat the egg yolks. Slowly whisk about 1/2 cup of the hot milk mixture into the egg yolks to temper them.

Step 5

Gradually pour the tempered egg yolks back into the saucepan, whisking continuously.

Step 6

Reduce heat to low and continue cooking for another 3-4 minutes, stirring constantly, until the pudding thickens further and coats the back of a spoon.

Step 7

Remove the saucepan from heat. Stir in the butter, lemon zest, lemon juice, and vanilla extract until smooth and well incorporated.

Step 8

Pour the pudding into individual serving cups or a large bowl. Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.

Step 9

Chill the pudding in the refrigerator for at least 2 hours or until fully set.

Step 10

Serve chilled, topped with whipped cream and a sprig of fresh mint if desired.
