Ingredients

  • 3 whole Lemons
  • 150 grams Granulated sugar
  • 4 large Egg yolks
  • 75 grams Unsalted butter
  • 200 milliliters Heavy cream
  • 0.5 teaspoons Vanilla extract
  • 1 tablespoons Powdered sugar

Directions

Step 1

Zest and juice the lemons. You should have approximately 100 milliliters of lemon juice. Set aside the zest.

In a medium, heatproof bowl, whisk together the granulated sugar and egg yolks until pale and well combined.

Add the lemon juice to the egg mixture, whisking constantly.

Place the bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water. Cook the mixture while whisking continuously until it thickens enough to coat the back of a spoon (about 8–10 minutes).
