Ingredients

  • 600 grams pearl onions
  • 3 tablespoons unsalted butter
  • 1.5 tablespoons all-purpose flour
  • 240 milliliters heavy cream
  • 120 milliliters chicken or vegetable stock
  • 1.5 teaspoons granulated sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons white pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Bring a medium pot of water to a boil. Add the pearl onions and blanch them for 2 minutes. Drain and rinse with cold water.

Step 2

Trim the root ends of the blanched onions and gently squeeze each onion to pop it out of its skin. Discard the skins and set the peeled onions aside.

Step 3

In a large skillet or saucepan, melt the butter over medium heat. Once melted, add the flour and stir constantly to make a roux. Cook for about 1 minute until the mixture is golden and has no raw flour smell.

Step 4

Gradually whisk in the heavy cream and chicken or vegetable stock, stirring constantly to avoid lumps. Continue cooking until the mixture starts to thicken, about 2-3 minutes.

Step 5

Stir in the sugar, salt, and white pepper. Taste and adjust seasoning if needed.

Step 6

Add the peeled onions to the skillet, stirring gently to coat them in the creamy sauce.

Step 7

Lower the heat to a simmer and cook for 10-15 minutes, stirring occasionally, until the onions are tender and evenly glazed with the sauce.

Step 8

Transfer the creamy glazed onions to a serving dish. Garnish with chopped fresh parsley if desired. Serve warm and enjoy!
