Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 120 milliliters Heavy cream
  • 20 grams Unsalted butter
  • 50 grams Cocoa powder (for coating)

Directions

Step 1

Chop the dark chocolate into small, even pieces and place in a medium-sized heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it is just about to simmer. Do not let it boil.

Step 3

Pour the hot cream over the chopped chocolate. Let it sit for 1-2 minutes to allow the chocolate to melt.

Step 4

Using a silicone spatula, gently stir the mixture until the chocolate and cream form a smooth, glossy ganache.

Step 5

Add the unsalted butter to the ganache and continue to stir until fully incorporated.

Step 6

Cover the bowl with plastic wrap and refrigerate the ganache for 2-3 hours, or until it is firm enough to scoop.

Step 7

Line a baking sheet with parchment paper. Using a small spoon or a melon baller, scoop out portions of the chilled ganache and roll them into balls with your hands (dampen your hands lightly to reduce sticking). Place each ball on the prepared baking sheet.

Step 8

Sift the cocoa powder into a shallow dish. Roll each truffle in the cocoa powder until well coated, shaking off any excess.

Step 9

Store the truffles in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before serving for the best texture and flavor.
