Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 14.5 ounces canned diced tomatoes
  • 8 ounces canned tomato sauce
  • 15 ounces canned corn, drained
  • 15 ounces black beans, rinsed and drained
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1.25 cups milk
  • 1 large egg
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks, about 5 minutes.

Step 3

Add the diced onion, green bell pepper, and minced garlic to the skillet. Sauté until softened, about 5 minutes.

Step 4

Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 1 minute to toast the spices.

Step 5

Add the diced tomatoes (with their juices), tomato sauce, canned corn, and black beans to the skillet. Stir everything together and let it simmer for 5 minutes. Remove from heat.

Step 6

Pour the beef and vegetable mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Step 7

In a medium bowl, whisk together the cornmeal, flour, baking powder, milk, and egg until smooth.

Step 8

Pour the cornmeal batter evenly over the beef mixture in the baking dish.

Step 9

Sprinkle the shredded cheddar cheese over the top of the cornmeal batter.

Step 10

Bake in the preheated oven for 30-35 minutes, or until the topping is golden and set.

Step 11

Remove from the oven and let the casserole cool for 5-10 minutes before serving. Enjoy your Lunchroom Tamale Pie warm!
