Ingredients

  • 250 grams all-purpose flour
  • 125 grams cold unsalted butter
  • 4 tablespoons cold water
  • 1 medium potato
  • 1 small carrot
  • 50 grams frozen peas
  • 80 grams cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Prepare the pastry: In a mixing bowl, combine the flour and a pinch of salt. Add the cold butter, diced into small cubes, and rub it into the flour with your fingertips until it resembles fine breadcrumbs.

Step 3

Add the cold water one tablespoon at a time, mixing gently after each addition, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 20 minutes.

Step 4

Meanwhile, prepare the filling: Peel and finely dice the potato and carrot into small cubes. Boil them in salted water for 5 minutes, then drain and let cool.

Step 5

In a mixing bowl, combine the boiled potato and carrot cubes, peas, and grated cheddar cheese. Season with salt and black pepper, and mix well.

Step 6

Remove the dough from the refrigerator and roll it out on a floured surface to about 3mm thick. Use a 15cm round cutter (or a bowl with a similar diameter) to cut circles out of the dough.

Step 7

Place a spoonful of the filling mixture in the center of each dough circle. Fold the dough over to form a semi-circle and crimp the edges together with a fork to seal.

Step 8

Beat the egg lightly and brush it over each pasty to give them a golden shine when baked.

Step 9

Place the pasties on the prepared baking tray and bake for 35–40 minutes, or until golden brown and crisp.

Step 10

Allow the pasties to cool slightly before serving, or pack them into lunchboxes once completely cool.
