Ingredients

  • 2 pieces Chicken breast
  • 1 large Ripe mango
  • 0.5 cup Plain Greek yogurt
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Curry powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 1 piece Celery stalk
  • 2 stalks Green onion
  • 2 tablespoons Cilantro
  • 2 cups Mixed greens or lettuce
  • 0.25 cup Chopped cashews (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet lined with parchment paper. Season with a pinch of salt and pepper.

Step 2

Bake the chicken for 18-20 minutes, or until fully cooked through and no longer pink in the center. Remove from the oven and allow to cool.

Step 3

While the chicken cools, peel and dice the mango into small cubes. Set aside.

In a large mixing bowl, whisk together Greek yogurt, mayonnaise, curry powder, lime juice, salt, and black pepper until smooth and well combined.
