Ingredients

  • 2.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 cup Unsalted butter (cold, cubed)
  • 6 tablespoons Ice water
  • 2 Apple (peeled, cored, and diced)
  • 0.25 cup Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Cornstarch
  • 1 Egg (beaten)
  • 0.5 cup Powdered sugar
  • 1 tablespoon Milk
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and granulated sugar.

Step 2

Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.

Step 3

Drizzle in the ice water, one tablespoon at a time, mixing until the dough just comes together.

Step 4

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Step 5

In a saucepan over medium heat, combine the diced apples, brown sugar, ground cinnamon, and cornstarch.

Step 6

Cook for 5-7 minutes, stirring occasionally, until the apples have softened and the mixture has thickened. Remove from heat and let cool.

Step 7

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 8

Roll out the chilled dough on a floured surface to about 1/8-inch thickness.

Step 9

Cut out circular shapes (about 5 inches in diameter) using a cookie cutter or a small bowl.

Step 10

Place a spoonful of the apple filling in the center of each dough circle.

Step 11

Fold the dough over the filling to create a semicircle and seal the edges by pressing with a fork.

Step 12

Brush the top of each pastry with the beaten egg for a golden finish.

Step 13

Transfer the pastries to the prepared baking sheet and bake for 20-25 minutes, or until golden brown.

Step 14

While the pamuelos are baking, make the glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl.

Step 15

Let the baked pastries cool for 10 minutes, then drizzle the glaze over the top.

Step 16

Serve warm or at room temperature and enjoy!
