Ingredients

  • 1 cup glutinous rice
  • 6 cups chicken broth
  • 1 cup cooked shredded chicken
  • 1 thumb-sized piece ginger
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons fish sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons cooking oil
  • 0.25 cup green onions
  • 0.25 cup fried garlic
  • 2 pieces calamansi or lemon wedges

Directions

Step 1

Rinse the glutinous rice under cold water until the water runs clear. This removes excess starch and prevents the porridge from becoming too thick.

Step 2

Peel and slice the ginger thinly. Peel and finely chop the onion and garlic.

Step 3

In a large pot over medium heat, add the cooking oil. Once the oil is hot, sauté the garlic until it is golden and crispy. Remove half of the fried garlic and set aside for garnish.

Step 4

Add the onions and ginger to the remaining garlic in the pot. Sauté until the onions are translucent and the ginger is aromatic.

Step 5

Pour in the chicken broth and bring to a boil.

Step 6

Add the rinsed rice to the broth, stirring occasionally to prevent it from sticking to the bottom of the pot.

Step 7

Reduce the heat to low, cover, and simmer for about 30-40 minutes, stirring occasionally, until the rice is fully cooked and the porridge reaches the desired consistency.

Step 8

Stir in the shredded chicken and fish sauce, continuing to cook until the chicken is heated through, about 5 minutes.

Step 9

Season with salt and ground black pepper to taste.

Step 10

Ladle the lugaw into bowls. Garnish each serving with the reserved fried garlic, chopped green onions, and calamansi or lemon wedges on the side.

Step 11

Serve hot and enjoy!
