Ingredients

  • 500 grams zucchini
  • 1 medium carrot
  • 1 small onion
  • 150 grams self-raising flour
  • 100 grams cheddar cheese
  • 100 grams bacon
  • 5 large eggs
  • 60 ml olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a rectangular baking dish (approximately 30cm x 20cm) with baking paper.

Grate the zucchini and place it in a colander. Sprinkle it lightly with a pinch of salt and let it sit for 5 minutes. Then, use your hands or a clean kitchen towel to squeeze out as much excess water as possible.
