Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Buttermilk
  • 0.75 cup Brown sugar, packed
  • 2 teaspoons Ground cinnamon
  • 0.25 cup Unsalted butter, melted
  • 0.5 cup Powdered sugar
  • 2 tablespoons Milk
  • 0.5 teaspoon Vanilla extract (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a medium bowl, sift together flour, granulated sugar, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter using a hand or stand mixer on medium speed until smooth and fluffy. Add the eggs one at a time, mixing well after each addition.

Step 4

Mix in the vanilla extract to the butter mixture, then alternate adding the dry ingredients and buttermilk in 3 additions, starting and ending with the dry ingredients. Mix just until combined, avoiding overmixing.

Step 5

Pour the batter into the prepared pan and spread it evenly with a spatula.

Step 6

In a small bowl, mix brown sugar and cinnamon together for the streusel topping. Drizzle in the melted butter and mix with a fork until clumps form.

Step 7

Sprinkle the streusel topping evenly over the batter in the pan.

Step 8

Bake the coffee cake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

While the cake is baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl. Adjust the consistency by adding more powdered sugar (to thicken) or milk (to thin).

Step 10

Allow the coffee cake to cool for 10-15 minutes in the pan. Once slightly cool, drizzle the glaze over the top.

Step 11

Slice into 12 pieces and serve warm or at room temperature. Enjoy!
