Ingredients

  • 4 pieces fish fillets (such as cod, salmon, or tilapia)
  • 2 tablespoons olive oil
  • 1 whole lemon
  • 2 cloves garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, sliced
  • 4 sheets aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Lay out 4 large sheets of aluminum foil, each about 12 inches long, on a flat surface.

Step 3

Drizzle 1/2 tablespoon of olive oil on the center of each foil sheet.

Step 4

Wash the fish fillets and pat them dry with a paper towel. Place one fillet in the center of each foil sheet.

Step 5

Season each fillet with 1/4 teaspoon of salt and a pinch of black pepper.

Step 6

Thinly slice the lemon. Place 2-3 lemon slices on top of each fillet.

Step 7

Sprinkle 1/2 tablespoon of minced garlic and 1/2 tablespoon of chopped parsley over each fillet.

Step 8

Distribute the zucchini slices, cherry tomato halves, and red onion slices evenly around the fish on each foil sheet.

Step 9

Fold each foil sheet over the fish and vegetables, creating a sealed packet by folding the edges tightly to ensure steam doesn't escape.

Step 10

Place the sealed packets on a baking sheet and transfer them to the oven.

Step 11

Bake for 18-20 minutes, or until the fish is opaque and flakes easily with a fork.

Step 12

Carefully remove the baking sheet from the oven. Allow the packets to cool for 2 minutes before carefully opening them to avoid releasing steam too quickly.

Step 13

Serve the fish and vegetables directly from the foil packets or transfer to plates. Garnish with additional parsley, if desired.
