Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 cups powdered sugar
  • 4 ounces cream cheese (softened)
  • 1 teaspoon mint extract
  • 4 drops green food coloring
  • 1 cup dark chocolate chips
  • 2 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper for easy removal.

Step 2

In a large microwave-safe bowl, melt the butter until completely liquid. Stir in the granulated sugar and vanilla extract until smooth.

Step 3

Add the eggs, one at a time, beating well after each addition.

Step 4

In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 5

Pour the brownie batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow to cool completely.

Step 6

While the brownie base cools, prepare the mint layer. In a medium bowl, beat the powdered sugar, cream cheese, mint extract, and green food coloring together until smooth and fluffy.

Step 7

Spread the mint filling evenly over the cooled brownie layer. Place the pan in the refrigerator to chill for at least 30 minutes.

Step 8

For the chocolate topping, melt the dark chocolate chips and heavy cream together in a microwave-safe bowl in 30-second increments, stirring after each interval, until smooth and glossy.

Step 9

Pour the melted chocolate over the mint layer and spread it evenly. Place the pan back in the refrigerator for another 30 minutes to set.

Step 10

Once the layers have set, lift the dessert out of the pan using the parchment paper. Cut into 16 squares and serve. Enjoy!
