  • 2 sheets Puff pastry sheets
  • 1 pound Sausage (ground, mild or spicy)
  • 5 large Eggs
  • 1 cup Shredded cheddar cheese
  • 1 medium Bell pepper (diced)
  • 3 stalks Green onion (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Butter
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a skillet, cook the ground sausage over medium heat until fully browned. Drain any excess fat and set the sausage aside to cool slightly.

Step 3

In the same skillet, melt the butter over medium heat. Crack 4 eggs into a bowl, whisk them, and pour them into the skillet. Cook the eggs, stirring gently, until just set but still soft. Remove from heat and set aside.

Dice the bell pepper and chop the green onions. In a mixing bowl, combine the cooked sausage, scrambled eggs, diced bell pepper, green onions, shredded cheddar cheese, salt, and black pepper. Mix thoroughly.
