Ingredients

  • 12 cups Italian bread (day-old, cubed)
  • 1 pound Mild Italian sausage, casings removed
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 2 cups Chicken or turkey broth
  • 0.25 cup Fresh parsley, chopped
  • 1 teaspoon Fresh rosemary, chopped
  • 2 teaspoons Fresh sage, chopped
  • 0.5 cup Grated Parmesan cheese
  • 1 large Egg, lightly beaten
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 350°F (175°C). Spread the cubed Italian bread onto a baking sheet and toast in the oven for 10-15 minutes, stirring occasionally, until golden and slightly dry. Set aside to cool.

Step 2

In a large skillet over medium heat, add the olive oil and cook the Italian sausage, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, melt the butter. Add the diced onion and celery, and sauté for 5 minutes or until softened. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

In a large mixing bowl, combine the toasted bread cubes, cooked sausage, and sautéed onion-celery mixture. Stir in the parsley, rosemary, sage, Parmesan cheese, salt, and black pepper.

Step 5

In a medium saucepan, warm the chicken or turkey broth over low heat. Gradually add the warm broth to the bread mixture, tossing gently to combine. Add the lightly beaten egg and mix until the stuffing is evenly moistened but not soggy. Adjust seasoning if needed.

Step 6

Transfer the mixture to a greased 9x13-inch baking dish and cover with foil. Bake in the preheated oven for 30 minutes.

Step 7

Remove the foil and bake for an additional 15-20 minutes or until the top is golden and slightly crispy.

Step 8

Serve warm as a side dish or use it to stuff your holiday turkey.
