Ingredients

  • 2 lb Russet potatoes
  • 6 slices Bacon
  • 1 medium Yellow onion
  • 0.333 cup White vinegar
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 0.5 cup Chicken broth

Directions

Step 1

Peel and slice the potatoes into 1/4-inch rounds. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender. Drain and set aside.

Step 2

While the potatoes cook, slice the bacon into small pieces. In a large skillet, cook the bacon over medium heat until crisp. Remove the bacon from the skillet with a slotted spoon and set aside, leaving the rendered bacon fat in the skillet.

Step 3

Finely chop the onion. Add it to the skillet with the bacon fat and sauté over medium heat until soft and translucent, about 5 minutes.

Step 4

Lower the heat and carefully stir in the white vinegar, granulated sugar, Dijon mustard, chicken broth, salt, and black pepper. Cook the mixture for 2-3 minutes, allowing the flavors to meld and slightly thicken.

Step 5

Gently fold the cooked potato slices into the skillet, ensuring the vinegar dressing evenly coats all the slices. Let the salad warm through for 3-5 minutes on low heat.

Step 6

Turn off the heat and stir in the crispy bacon pieces. Garnish with freshly chopped parsley before serving.

Step 7

Serve the hot potato salad immediately as a side dish to complement roasted meats or sausages.
