Ingredients

  • 1 9-inch pre-made crust Graham cracker crust
  • 1.5 cups Semi-sweet chocolate chips
  • 0.5 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 0.25 teaspoon Salt
  • 2.5 cups Whole milk
  • 4 large Egg yolks
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped cream (optional)
  • 2 tablespoons Chocolate shavings or sprinkles (optional)

Directions

Step 1

In a medium saucepan, combine the granulated sugar, cornstarch, and salt. Mix well to eliminate any lumps.

Step 2

Slowly add the milk to the saucepan, whisking continuously to form a smooth mixture.

Step 3

Place the saucepan on medium heat and cook, stirring constantly, until the mixture begins to thicken and bubble slightly. This will take roughly 5-7 minutes.

Step 4

In a small mixing bowl, whisk together the egg yolks. Gradually add about 1/2 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.

Step 5

Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring continuously, for an additional 2-3 minutes, or until the mixture is thick and creamy.

Step 6

Remove the saucepan from heat and stir in the semi-sweet chocolate chips, unsalted butter, and vanilla extract. Continue stirring until the chocolate is completely melted and the mixture is smooth.

Step 7

Pour the chocolate filling into the graham cracker crust, spreading it evenly with a spatula.

Step 8

Cover the pie with plastic wrap, pressing the wrap gently onto the surface of the chocolate to prevent a skin from forming.

Step 9

Refrigerate the pie for at least 4 hours or preferably overnight, until fully set.

Step 10

Before serving, optionally top with whipped cream and garnish with chocolate shavings or sprinkles.
