Preheat your oven to 375°F (190°C).
Season both sides of the chicken breasts with salt, black pepper, and garlic powder.
Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside (they do not need to be cooked through).
Lower the heat to medium and melt the butter in the skillet. Add the sliced mushrooms and sauté for 5-7 minutes until they release their liquid and soften.
Add the minced garlic to the mushrooms and sauté for another minute until fragrant.
Pour in the chicken broth and scrape the bottom of the skillet to deglaze it, incorporating any browned bits. Let the broth simmer for 2-3 minutes.
Stir in the heavy cream and bring the mixture to a gentle simmer. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
Place the partially cooked chicken breasts in a 9x13-inch baking dish. Pour the mushroom cream sauce evenly over the chicken.
Sprinkle the shredded Monterey Jack cheese and Colby Jack cheese evenly over the top of the dish.
Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
Remove the dish from the oven and let it rest for 5 minutes. Optionally, garnish with chopped parsley before serving.
Serve hot with your choice of sides, such as rice, pasta, or steamed vegetables.
