Ingredients

  • 2 pounds beef chuck roast
  • 0.25 cups all-purpose flour
  • 1.5 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 3 medium carrots, sliced
  • 2 medium celery stalks, chopped
  • 3 medium russet potatoes, peeled and cubed
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into 1.5-inch cubes.

Step 2

In a mixing bowl, toss the beef cubes with flour, 1 teaspoon of salt, and 0.5 teaspoon of black pepper until evenly coated.

Step 3

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 4

Brown the beef in batches, making sure not to overcrowd the pan. Transfer the browned beef to a plate and set aside.

Step 5

In the same pot, add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 6

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 7

Stir in the beef broth, tomato paste, Worcestershire sauce, and bay leaf. Scrape the bottom of the pot to deglaze and incorporate browned bits for flavor.

Step 8

Return the browned beef to the pot. Bring to a simmer, cover, and reduce heat to low. Let it cook for 60 minutes, stirring occasionally.

Step 9

After 60 minutes, add the sliced carrots, chopped celery, and cubed potatoes to the pot. Stir to combine and continue simmering for another 40 minutes until the vegetables are tender.

Step 10

Remove the bay leaf and stir in the frozen peas. Adjust seasoning with the remaining 0.5 teaspoon of salt and 0.5 teaspoon of black pepper, or to taste. Cook for 5 additional minutes.

Step 11

Serve hot, garnished with freshly chopped parsley if desired, and enjoy your hearty Luby's Cafeteria Beef Stew!
