Ingredients

  • 4 lbs Pork shoulder (bone-in or boneless)
  • 2 tbsp Hawaiian sea salt (or coarse sea salt)
  • 1.5 tbsp Liquid smoke
  • 4 Banana leaves
  • 1 cup Chicken stock
  • 3 Garlic cloves (minced)
  • 1 White onion (sliced)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Rinse and pat dry the pork shoulder. Rub it generously with the Hawaiian sea salt, ensuring the entire surface is well-seasoned.

Step 3

Pour the liquid smoke over the pork and rub it evenly to infuse the smoky flavor.

Step 4

Lay a large sheet of aluminum foil over a clean workspace. Place two banana leaves on the foil, overlapping slightly.

Step 5

Place the seasoned pork shoulder onto the banana leaves. Sprinkle the minced garlic and sliced onion over the top of the pork for added flavor.

Wrap the pork tightly with the banana leaves, folding them in to completely cover the meat. Then wrap the entire package with the aluminum foil to seal in the moisture.

Cover the roasting pan tightly with a lid or an additional layer of aluminum foil.

Slow-cook the pork in the preheated oven for 7-8 hours, or until the meat is tender and easily pulls apart with a fork.

Remove the pork from the oven and allow it to rest for 15 minutes. Carefully unwrap the banana leaves and aluminum foil.

Shred the pork using two forks and mix in the juices from the roasting pan for added moisture and flavor.
