Ingredients

  • 300 grams Vanilla wafer cookies
  • 120 grams Powdered sugar
  • 30 grams Unsweetened cocoa powder
  • 120 grams Pecans or walnuts, finely chopped
  • 80 milliliters Dark rum or bourbon
  • 2 tablespoons Light corn syrup
  • 50 grams Additional powdered sugar (for coating)

Directions

Step 1

Place the vanilla wafer cookies in a food processor and pulse until finely ground. Alternatively, place them in a resealable plastic bag and crush them with a rolling pin until they become fine crumbs.

Step 2

In a large mixing bowl, combine the cookie crumbs, powdered sugar, cocoa powder, and chopped pecans or walnuts. Stir well to evenly distribute the ingredients.

Step 3

In a small bowl, mix the rum or bourbon with the light corn syrup until well combined.

Step 4

Pour the liquid mixture over the dry ingredients in the large mixing bowl. Stir until the mixture is moistened and forms a cohesive dough.

Step 5

Using clean hands or a small scoop, shape the dough into 1-inch balls. Place them on a baking sheet lined with parchment paper or a silicone mat.

Step 6

Roll each ball in additional powdered sugar to coat them completely. If you prefer a lighter coating, gently tap off excess sugar.

Step 7

Once all balls are coated, transfer them to an airtight container. Let them rest for at least 24 hours at room temperature to allow the flavors to meld and develop.

Step 8

Serve at room temperature, and enjoy responsibly as these contain alcohol. Store in an airtight container for up to 2 weeks.
