Ingredients

  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 can (14.5 ounces) Diced tomatoes (with juice)
  • 1 can (8 ounces) Tomato sauce
  • 3 cups Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Elbow macaroni (uncooked)
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil and ground beef, breaking it up with a wooden spoon as it cooks. Cook until the beef is browned, about 5-7 minutes. Drain any excess grease, if necessary.

Step 2

Add the diced onion to the pot with the beef and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
