Ingredients

  • 300 grams Macaroni or other short pasta
  • 300 grams Potatoes
  • 250 ml Heavy cream
  • 250 ml Milk
  • 200 grams Gruyère cheese, grated
  • 2 tablespoons Butter
  • 1 medium Onion, thinly sliced
  • 1 medium Apple, thinly sliced (optional, for serving)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Directions

Step 1

Peel the potatoes and cut them into 1 cm cubes. Set aside.

Step 2

Bring a large pot of salted water to a boil. Add the macaroni and the cubed potatoes to the pot and cook together according to the pasta's package instructions (about 8-10 minutes). Drain and set aside.

Step 3

In a small saucepan, heat the milk and heavy cream over low heat. Do not allow it to boil. Once warm, set aside.

Step 4

Melt 2 tablespoons of butter in a pan over medium heat. Add the thinly sliced onion and sauté until golden and caramelized, about 10 minutes. Stir frequently to prevent burning.

Step 5

Preheat your oven to 180°C (350°F) if you plan to bake the dish for a golden, crispy topping (optional step).

Step 6

In a large oven-safe dish or pot, combine the cooked macaroni, potatoes, warm milk and cream mixture, and 150 grams of grated Gruyère cheese. Season with salt and pepper to taste. Mix well until everything is evenly coated.

Step 7

If baking: Top the mixture with the remaining 50 grams of grated Gruyère cheese. Bake in the preheated oven for 10-15 minutes, until the cheese is melted and golden.

Step 8

While the dish bakes, if serving with apples, lightly sauté the apple slices in a small amount of butter in a frying pan until softened and slightly caramelized.

Step 9

Remove the Älplermagronen from the oven and let it sit for 5 minutes. Sprinkle the caramelized onions over the top for garnish.

Step 10

Serve hot, optionally accompanied by the caramelized apple slices for a sweet and savory twist.
