Ingredients

  • 300 g Macaroni (or any short pasta)
  • 300 g Potatoes (peeled and diced)
  • 200 ml Heavy cream
  • 150 ml Milk
  • 150 g Gruyère cheese (grated)
  • 100 g Emmental cheese (grated)
  • 30 g Butter
  • 1 large Onion (sliced thinly)
  • 30 g Breadcrumbs
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 0.25 tsp Nutmeg (optional, freshly grated)
  • 2 tbsp Chives or parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the diced potatoes and cook for about 5 minutes.

Step 2

Add the macaroni to the same pot with the potatoes and cook together until the pasta is al dente, following packet instructions. Drain and set aside.

Step 3

While the pasta and potatoes are cooking, heat the butter in a frying pan over medium heat. Add the sliced onion and sauté until golden brown, stirring occasionally. Set the crispy onions aside.

Step 4

In a small saucepan, combine the heavy cream, milk, salt, pepper, and nutmeg (if using). Heat gently over low to medium heat, being careful not to let it boil.

Preheat your oven to 200°C (400°F). In a large baking dish, layer the drained macaroni and potatoes with the grated Gruyère and Emmental cheeses, pouring the cream mixture evenly over each layer.
