Ingredients

  • 2 pounds beef chuck, cut into 2-inch cubes
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 2 medium parsnips, peeled and cut into 1-inch pieces
  • 4 medium russet potatoes, peeled and cut into chunks
  • 2 tablespoons tomato paste
  • 2 cups Guinness stout
  • 2 cups beef broth
  • 3 sprigs fresh thyme sprigs
  • 2 leaves bay leaves
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the beef chunks with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Coat the beef in the all-purpose flour, shaking off any excess.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the beef in batches for 3-4 minutes per side, then transfer to a slow cooker.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the diced onion for 3-4 minutes until softened.

Step 5

Add the minced garlic to the skillet and cook for another 1 minute, stirring frequently to avoid burning.

Step 6

Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.

Step 7

Deglaze the skillet by pouring in 1/2 cup of the Guinness stout, scraping up any browned bits from the bottom of the pan. Pour this mixture into the slow cooker.

Step 8

Add the carrots, parsnips, potatoes, and any remaining Guinness stout to the slow cooker.

Step 9

Pour in the beef broth and gently stir to combine.

Step 10

Tuck the thyme sprigs and bay leaves into the stew, ensuring they are submerged in the liquid.

Step 11

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is fork-tender and the vegetables are cooked through.

Step 12

In the last 30 minutes of cooking, stir in the frozen peas to add a bright touch of sweetness.

Step 13

Discard the thyme sprigs and bay leaves before serving.

Step 14

Ladle the stew into bowls, garnish with fresh parsley, and serve warm with crusty bread for dipping.
