Peel and finely chop the yellow onion.
Slice the smoked salmon (lox) into bite-sized pieces and set aside.
Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper. Whisk until the mixture is fully combined and slightly frothy.
Heat a non-stick skillet over medium heat. Add 1 tablespoon of butter, allowing it to melt and coat the pan.
Add the chopped onion to the skillet. Cook for 5-7 minutes, stirring occasionally, until the onion is soft and golden brown.
Reduce the heat to medium-low. Push the onions to one side of the skillet. Add the remaining tablespoon of butter to the empty side of the pan and let it melt.
Pour the egg mixture into the skillet and allow it to cook undisturbed for about 30 seconds, just until the edges begin to set.
Using a spatula, gently fold the eggs, incorporating the caramelized onions into the mixture. Continue cooking, folding slowly, for 2-3 minutes, or until the eggs are just set but still creamy.
Add the smoked salmon pieces to the eggs. Fold them in gently and cook for another 1 minute to warm the salmon through.
Remove the skillet from heat immediately to prevent overcooking the eggs.
Divide the lox and eggs mixture onto two plates. Garnish with fresh parsley, if desired, and serve immediately.
