  • 1 cup Whole wheat flour
  • 1 cup Wheat bran
  • 0.5 cup Brown sugar (packed)
  • 0.5 cup Unsweetened applesauce
  • 0.75 cup Low-fat milk
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Raisins or dried fruit (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly coat with nonstick cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, wheat bran, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.

Step 3

In a separate mixing bowl, whisk together the applesauce, low-fat milk, egg, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Do not overmix; some lumps are okay.
