  • 75 grams coconut sugar
  • 1 teaspoon vanilla extract
  • 60 grams all-purpose flour
  • 20 grams unsweetened cocoa powder
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat your oven to 175°C (350°F). Line a 20 cm x 20 cm (8-inch x 8-inch) baking pan with parchment paper, leaving a small overhang on the sides for easy removal.

Step 2

In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water or in the microwave in 20-second intervals, stirring frequently until smooth. Set aside to cool slightly.

In a large mixing bowl, whisk together the eggs, coconut sugar, and vanilla extract until pale and frothy, about 2–3 minutes.
