Ingredients

  • 3 cloves garlic cloves, minced
  • 400 grams canned chopped tomatoes (no added salt)
  • 250 milliliters low-sodium vegetable stock
  • 150 grams cooked green lentils (drained)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 leaf bay leaf
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt (optional or to taste)
  • 50 grams baby spinach, roughly chopped

Directions

Step 1

Heat the olive oil in a large, deep skillet or saucepan over medium heat.

Step 2

Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Increase the heat to medium-high and add the lean ground beef. Cook until the beef is browned, breaking it up into small pieces with a spoon, about 5 minutes.

Stir in the tomato paste, cooking for 2 minutes to deepen its flavor.
