  • 450 grams Fresh green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 240 milliliters Low-sodium chicken broth (or vegetable broth)
  • 240 milliliters Low-fat milk
  • 2 tablespoons All-purpose flour
  • 120 grams Low-fat sour cream
  • 30 grams Grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 60 grams French-fried onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of water to a boil. Add the green beans and blanch for 5 minutes. Drain and rinse with cold water to stop the cooking process.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
