Ingredients

  • 20 pieces Large button or cremini mushrooms
  • 4 ounces Reduced-fat cream cheese, softened
  • 4 ounces Low-fat ricotta cheese
  • 2 tablespoons Parmesan cheese, finely grated
  • 2 tablespoons Fresh parsley, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Bread crumbs (preferably whole wheat, optional for topping)
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with cooking spray.

Clean the mushrooms with a damp paper towel to remove any dirt. Gently remove the stems and set them aside. Arrange the mushroom caps, hollow side up, on the prepared baking sheet.

Finely chop the reserved mushroom stems.
