Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups whole wheat flour
  • 0.5 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 1.5 cups grated apple (about 2 medium apples)
  • 0.5 cups unsweetened applesauce
  • 0.5 cups low-fat plain yogurt
  • 1 large egg
  • 1 teaspoons vanilla extract
  • 0.25 cups rolled oats
  • 2 tablespoons light brown sugar (for streusel topping)
  • 1 tablespoons all-purpose flour (for streusel topping)
  • 0.5 teaspoons ground cinnamon (for streusel topping)
  • 1 tablespoons unsalted butter, melted (for streusel topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with muffin liners or lightly grease it with non-stick cooking spray.

Step 2

In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.

Step 3

In a medium bowl, mix the grated apple, applesauce, yogurt, egg, and vanilla extract until well combined.

Step 4

Add the wet ingredients to the dry ingredients and gently mix until just combined. Be careful not to overmix, as this can result in dense muffins.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 6

To prepare the streusel topping, in a small bowl, combine the rolled oats, brown sugar, flour, and cinnamon. Stir in the melted butter until the mixture resembles coarse crumbs.

Step 7

Sprinkle the streusel topping evenly over the muffin batter.

Step 8

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to 3 days.
