Ingredients

  • 1 unit (9-inch) Pre-made pie crust
  • 4 slices Turkey bacon (or reduced-fat bacon)
  • 4 cups Fresh spinach
  • 3 large Eggs
  • 2 large Egg whites
  • 1 cup Low-fat buttermilk
  • 1 cup Shredded reduced-fat cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg
  • 1 spray Olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the pre-made pie crust in a 9-inch pie dish, crimping the edges if needed. Set aside.

Step 2

Cook the turkey bacon in a non-stick skillet over medium heat until crisp. Remove from the skillet, let it cool slightly, then crumble it into small pieces. Set aside.

Step 3

In the same skillet, lightly spray olive oil. Add the fresh spinach and sauté over medium heat until wilted (about 2-3 minutes). Transfer to a plate and let it cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, egg whites, and low-fat buttermilk until smooth. Stir in the shredded cheese, salt, black pepper, and nutmeg.

Step 5

Spread the crumbled bacon and wilted spinach evenly over the prepared pie crust.

Step 6

Pour the egg mixture over the bacon and spinach, ensuring it is evenly distributed.

Step 7

Place the quiche in the oven and bake for 35-40 minutes, or until the center is set and the top is golden brown.

Step 8

Let the quiche rest for 5-10 minutes before slicing. Serve warm or at room temperature.
