Ingredients

  • 4 cups fresh blackberries
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 0.5 cup unsweetened almond milk
  • 0.25 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons stevia granulated sweetener

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish with non-stick spray or a small amount of oil.

Step 2

In a large mixing bowl, combine the fresh blackberries, honey, lemon juice, and cornstarch. Mix gently to coat the blackberries evenly, then transfer the mixture into the prepared baking dish.

Step 3

In a separate bowl, whisk together the whole wheat flour, baking powder, salt, and stevia granulated sweetener.

Step 4

Add the almond milk, unsweetened applesauce, and vanilla extract to the dry ingredients. Stir until a smooth batter forms, making sure not to overmix.

Step 5

Spoon the batter evenly on top of the blackberry mixture in the baking dish, spreading it out lightly with the back of the spoon. Leave some gaps for the filling to bubble through as it bakes.

Step 6

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the blackberries are bubbling around the edges.

Step 7

Remove the cobbler from the oven and let it cool for 10 minutes before serving. Enjoy warm, optionally with a dollop of low-fat yogurt or a drizzle of additional honey.
