Ingredients

  • 2 pieces Boneless, skinless chicken breasts

  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (finely chopped)
  • 1 tablespoon Fresh dill (finely chopped)
  • 1 tablespoon Fresh basil (chopped)
  • 4 cups Mixed baby greens
  • 1 medium Cucumber (sliced)
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Avocado (sliced)
  • 0.25 cup Red onion (thinly sliced)
  • 0.25 teaspoon Black pepper (freshly ground)
  • 0.125 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, parsley, dill, basil, black pepper, and red pepper flakes (if using). Divide the mixture into two portions.

Place the chicken breasts in a shallow dish or zip-top bag and pour one portion of the lemon-herb marinade over them. Ensure the chicken is well-coated. Marinate in the refrigerator for at least 15 minutes, or up to 1 hour for stronger flavor.
